A Recipe From Barbara
4 large onions (about 2 pounds), peeled
Cut each onion in half so you can make bowls out of the cut pieces. Use just the largest onion bowls for stuffing.
Chop the center of the onion pieces finely. In a medium frying pan, melt butter and add a 1/8 teaspoon of vegetable oil. Place onions and sauté while stirring until the onions are golden, for about 3 minutes.
Remove from heat and had the rest of your ingredients. Stir this stuffing well. Place the stuffing into each onion bowl and have a round top.
Place the filled onion bowls in a large rectangle baking dish. Cover with aluminum foil and bake in a preheated oven (350*) for about 1 1/2 hours.
You are baking these stuffed onions with your roast in the oven.
