Grilled Garden Vegetables

1 medium zucchini
1 medium yellow squash
1 small eggplant
1 green pepper
1 red pepper
1 medium onion
salt and black pepper to taste
olive oil

Preheat oven broiler or barbecue grill.

Slice zucchini, squash, eggplant, and onion into 1/2 inch thick slices. Cut each pepper into 1 inch wide strips.

Brush the vegetables with olive oil and season with salt and pepper.

Oven Cooking:
Place vegetables on a foil covered cookie sheet. Broil for about 4 inches from heat. cook for about 3 to 5 minutes.

Grill Cooking
Spread vegetables in a metal barbecue basket there is a single layer. Grill until they are just starting to brown.

Do not over cook the vegetables. They are best when the vegetables are crisp.
